Our wild Kodiak scallops are sure to wow your taste buds. Know for their soft, fleshy texture and sweet flavor, they are classified as a “dry scallop”, meaning no sodium tripolyphosphate (STPP) was used in their processing. STPP is typically added to most scallops when they are harvested as a preservative, which also causes them to retain water and imparts and unpleasant soapy taste and bouncy texture to flesh. Kodiak dry scallops are not treated with preservatives, giving them a suburb flavor and texture, perfect for pan searing.
