New Product Alert "Kodiak Scallops"

Recently I had the opportunity to add a new product to our Fish Market. Kodiak Scallops are a weathervane scallop and packed in 1.25 pound packages and come in a 5 pound box. These Scallops are dry meaning they are tri sodium polyphoshphate free. There are two types of processing for scallops Wet and Dry. wet refers to the tri sodium polyphosphate. TSPP is a solution to help preserve the scallop until eaten. This process also adds weight to the Scallop. Also worth noting is that a wet Scallop is nearly impossible to sear and the dry ones are perfect for that method of cooking.
